Ingredients

Scale

For the Focaccia:

  • 4 3/4 cups (570 grams) all-purpose flour
  • 1 tablespoon (12 grams) fine sea salt
  • 2 1/4 teaspoons (7 grams) active dry yeast
  • 2 cups (452 grams) warm water
  • 1/4 cup (60 grams) olive oil
  • 1 tablespoon (21 grams) honey

For the Pizza:

  • 1 12-ounce jar pizza sauce (such as RAO’s brand)
  • 2 cups (about 8 ounces) shredded mozzarella cheese
  • Thick-sliced pepperoni, as much as desired
  • 1 cup (8 ounces) whole milk ricotta cheese, seasoned with salt, red pepper flakes, and dried oregano

Instructions

  1. Prepare the focaccia dough: In a large mixing bowl, combine the all-purpose flour, fine sea salt, and active dry yeast. In a separate bowl, mix warm water with honey and olive oil until well combined. Gradually add the wet mixture to the dry ingredients, stirring to form a sticky dough. Knead the dough for about 8-10 minutes until smooth and elastic.
  2. Let the dough rise: Place the dough in a lightly oiled bowl, cover it with plastic wrap or a clean kitchen towel, and let it rise in a warm place for 1 to 1.5 hours, or until it doubles in size.
  3. Shape and pre-bake the focaccia: Once the dough has risen, gently deflate it and transfer it to a greased baking sheet or pizza pan. Stretch and press the dough out to fit the pan evenly, creating little dimples with your fingers on the surface. Drizzle a little olive oil over the top. Pre-bake the focaccia in a preheated oven at 450°F (232°C) for 8-10 minutes until it is just set but not fully browned.
  4. Add toppings: Remove the focaccia from the oven. Spread the pizza sauce evenly over the surface, then sprinkle the shredded mozzarella cheese generously. Arrange thick slices of pepperoni on top. Dollop the seasoned ricotta cheese over the pizza in small spoonfuls.
  5. Bake the pizza: Return the focaccia pizza to the oven and bake for an additional 10-15 minutes, or until the cheese is melted, bubbly, and starting to brown, and the crust is golden and crispy.
  6. Serve and enjoy: Remove the pizza from the oven, let it cool slightly, then slice and serve warm. Enjoy the perfect combination of fluffy focaccia with classic pizza toppings.

Notes

  • Use warm water (not hot) to activate the yeast properly without killing it.
  • Letting the dough rise until doubled ensures a light and airy focaccia base.
  • Pre-baking focaccia before adding toppings prevents soggy crust.
  • Season the ricotta with salt, red pepper flakes, and dried oregano for added flavor.
  • Feel free to customize toppings with your favorite pizza ingredients.
  • Store leftover focaccia pizza wrapped tightly in the refrigerator for up to 3 days.
