  • 1 x 227g can chopped tomatoes

  • 1 pack Beyond Sausage (usually about 170g per pack)

Seasonings and Liquids

  • 2 tbsp vegetable oil
  • 150ml vegetable stock
  • 3 tsp Cajun seasoning

Instructions

  1. Prep the vegetables: Dice the onion, carrot, and celery. Slice the red pepper and chop the garlic cloves finely for even cooking and flavor release.
  2. Cook the sausage: Heat 2 tablespoons of vegetable oil in a large pot over medium heat. Add the Beyond Sausage and cook until browned on all sides, about 5-7 minutes. Remove from the pot and set aside.
  3. Sauté the vegetables: In the same pot, add the diced onion, carrot, celery, red pepper, and garlic. Cook over medium heat, stirring occasionally, until the vegetables soften and the onion turns translucent, about 5-8 minutes.
  4. Add legumes and seasonings: Return the browned sausage to the pot. Add the rinsed green lentils and chickpeas, then pour in the vegetable stock and canned chopped tomatoes. Sprinkle the Cajun seasoning evenly over the mixture and stir well to combine all ingredients.
  5. Simmer the one-pot: Bring the mixture to a low boil, then reduce the heat and let it simmer uncovered for 15-20 minutes, stirring occasionally, until the lentils are tender and the sauce has thickened.
  6. Final taste and serve: Adjust seasoning with salt and pepper if desired. Serve the sausage, lentil, and chickpea one-pot hot, optionally garnished with fresh herbs or a squeeze of lemon juice for brightness.
