Peanut Butter Butterscotch Bars are a rich, chewy, no-bake treat made with a perfect blend of creamy peanut butter and sweet butterscotch chips, layered over a crunchy cereal base for a nostalgic, melt-in-your-mouth dessert.

  • 1 cup butterscotch chips
  • 1/2 cup unsalted butter
  • 1/2 cup light corn syrup
  • 1/2 cup granulated sugar
  • 5 cups crispy rice cereal
  • 1/2 teaspoon vanilla extract

Instructions

  1. Line a 9×13-inch baking pan with parchment paper or lightly grease it.
  2. In a large saucepan over medium heat, combine the peanut butter, butterscotch chips, butter, corn syrup, and sugar.
  3. Stir constantly until the mixture is smooth and fully melted.
  4. Remove from heat and stir in the vanilla extract.
  5. Quickly fold in the crispy rice cereal until evenly coated.
  6. Press the mixture firmly and evenly into the prepared pan.
  7. Allow bars to cool completely at room temperature, or refrigerate for quicker setting.
  8. Cut into squares or bars and serve.
