Loaded Potato Soup is a rich and creamy comfort food favorite made with tender potatoes, savory bacon, melted cheese, and green onions, delivering all the flavors of a loaded baked potato in a warm, hearty bowl.

  • 6 slices bacon, chopped
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 4 cups potatoes, peeled and diced
  • 4 cups chicken broth
  • 3 tablespoons unsalted butter
  • 3 tablespoons all-purpose flour
  • 2 cups milk
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/2 teaspoon salt (or to taste)
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon smoked paprika (optional)
  • 1/4 cup chopped green onions (for garnish)

Instructions

  1. In a large pot over medium heat, cook chopped bacon until crispy. Remove with a slotted spoon and set aside, leaving about 1 tablespoon of bacon drippings in the pot.
  2. Add diced onion to the pot and sauté until softened, about 3 minutes. Stir in minced garlic and cook for 1 minute.
  3. Add diced potatoes and chicken broth. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 10–15 minutes.
  4. In a separate saucepan, melt butter over medium heat. Whisk in flour and cook for 1–2 minutes to form a roux.
  5. Slowly whisk in milk until smooth and thickened, about 3–5 minutes.
  6. Pour the milk mixture into the potato pot and stir to combine.
  7. Add shredded cheddar cheese, sour cream, salt, pepper, and smoked paprika, stirring until cheese is melted and soup is creamy.
  8. Adjust seasoning to taste.
  9. Serve hot, topped with crispy bacon, green onions, and extra cheese if desired.
