A hearty and comforting keto-friendly casserole that replicates the classic tatertot dish using low-carb cauliflower tots, ground beef, and a rich cheesy sour cream topping. Perfect for those seeking a rich, cheesy, and satisfying meal without the carb overload, this casserole is simple to prepare, make-ahead ready, and family friendly.

Ingredients

Scale

Meat & Base

  • 1 lb ground beef
  • 1 cup diced onion
  • 1 tbsp butter or olive oil

Cheese & Cream

  • 2 cups shredded cheddar cheese
  • 1 cup sour cream

Topping & Seasoning

  • 1 package (about 12 oz) cauliflower tots
  • 1 tsp garlic powder
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Prepare the Meat Layer: Heat butter or olive oil in a skillet over medium heat. Sauté the diced onion until translucent. Add the ground beef and cook until browned. Season with garlic powder, salt, and pepper. Drain any excess fat for a cleaner finish.
  2. Mix the Creamy Base: In a bowl, combine the shredded cheddar cheese and sour cream. Stir well until combined, creating a creamy topping that will hold the casserole layers together.
  3. Assemble the Casserole: Grease a baking dish. Spread the cooked ground beef mixture evenly across the bottom. Next, evenly spread the creamy cheese and sour cream mixture on top. Finally, arrange the cauliflower tots in a single layer over the cheese layer.
  4. Bake Until Golden and Bubbling: Preheat the oven to 375°F (190°C). Bake the casserole for 25-30 minutes, or until the cauliflower tots are crisp and golden and the cheese is bubbling around the edges.
  5. Rest and Serve: Allow the casserole to rest for about 5 minutes after baking to help the flavors meld and make it easier to slice and serve.

Notes

  • Use fresh cauliflower tots with minimal fillers for the best low-carb impact.
  • Drain excess fat from cooked meat to avoid a soggy casserole.
  • Watch the cauliflower tots closely to avoid overbaking; a crisp and golden topping is ideal.
  • Sharp cheddar cheese melts well and adds depth, but mixing cheeses can create fun flavor variations.
  • Letting the casserole rest after baking helps it set and hold slices better.
