Ingredients

Scale

Ham and Aromatics

  • 1 fully cooked bone-in spiral ham, 8 lbs
  • 1 orange, sliced
  • 1 cup orange juice

Orange Honey Glaze

  • 1 cup dark brown sugar
  • 1 cup honey
  • 1/2 cup orange marmalade
  • 1/4 cup Dijon mustard
  • 1 tsp ground cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp Bayou City Lemon Pepper
  • 1/2 tsp cloves
  • 1 tsp salt

Instructions

  1. Preheat the Oven: Begin by preheating your oven to 325°F (163°C) to ensure it’s at the right temperature for baking the ham evenly.
  2. Prepare the Ham: Place the fully cooked spiral ham in a roasting pan. Arrange the orange slices on top and around the ham, then pour the orange juice into the bottom of the pan to keep the ham moist during baking.
  3. Make the Orange Honey Glaze: In a medium saucepan, combine the dark brown sugar, honey, orange marmalade, Dijon mustard, ground cinnamon, nutmeg, lemon pepper, cloves, and salt. Warm over medium heat, stirring frequently until the sugar dissolves and the glaze is smooth and slightly thickened, about 5-7 minutes.
  4. Glaze the Ham: Brush the prepared glaze all over the ham, making sure to get into the spiral slices as much as possible. Reserve some glaze for basting during baking.
  5. Bake the Ham: Cover the roasting pan loosely with aluminum foil and place the ham in the preheated oven. Bake for approximately 1.5 to 2 hours, basting the ham with reserved glaze every 30 minutes to build up a glossy, flavorful coating.
  6. Finish the Ham: During the last 15-20 minutes of baking, remove the foil to allow the glaze to caramelize and become a beautiful, sticky crust. Keep an eye to prevent burning.
  7. Rest and Serve: Remove the ham from the oven and let it rest for 10-15 minutes before slicing. This helps the juices redistribute, ensuring moist and tender meat. Serve warm with your favorite sides.

Notes

  • Use a meat thermometer to ensure the internal temperature reaches 140°F (60°C) for serving temperature since the ham is pre-cooked.
  • For a deeper flavor, prepare the glaze a day ahead and refrigerate it to allow the spices to meld.
  • Save any leftover glaze for drizzling over mashed potatoes or roasted vegetables.
  • If you don’t have Bayou City Lemon Pepper, substitute with regular lemon pepper or lemon zest with black pepper.
  • Cover the ham loosely with foil to prevent the glaze from burning while baking.
