Pork Chops

  • 2 x 9oz (250g) bone-in pork chops, brought close to room temperature

Sauce and Seasoning

  • 2 tbsp unsalted butter
  • 4 large cloves of garlic (2 lightly crushed with skins on, 2 minced)
  • 1/4 cup (80g) honey
  • 1.5 tbsp apple cider vinegar
  • 1 tbsp light/all-purpose soy sauce
  • 1 sprig of rosemary
  • 1 sprig of thyme
  • Salt & black pepper, to taste
  • Olive oil, as needed

Instructions

  1. Prepare the Pork Chops: Remove the pork chops from the refrigerator and let them come close to room temperature for about 20-30 minutes. This ensures even cooking and better sear.
  2. Season the Pork Chops: Pat the pork chops dry with paper towels. Season both sides generously with salt and black pepper.
  3. Heat the Pan: Place a skillet or frying pan over medium-high heat. Add a drizzle of olive oil to coat the pan.
  4. Sear the Pork Chops: Add the pork chops to the hot pan and cook for about 3-4 minutes on each side until nicely browned and cooked through. Remove the chops and set aside on a plate.
  5. Add Butter and Garlic: Reduce heat to medium. Add unsalted butter to the pan along with the 2 crushed garlic cloves (with skins on). Sauté until fragrant and the garlic softens, about 1-2 minutes.
  6. Make the Sauce: Stir in the minced garlic, honey, apple cider vinegar, and soy sauce. Add the rosemary and thyme sprigs. Let the sauce simmer gently for 2-3 minutes until it thickens slightly.
  7. Glaze the Pork Chops: Return the pork chops to the pan, spooning the honey garlic sauce over them. Cook for another 1-2 minutes, allowing the pork to soak in the flavors.
  8. Serve: Remove the herbs and garlic skins. Serve the pork chops hot, drizzled with the remaining sauce from the pan.
