  • 1 Tbsp avocado oil (or olive oil)
  • 2 Tbsp balsamic vinegar
  • 2 Tbsp honey
  • 2 garlic cloves, minced
  • 1 tsp dried thyme
  • ¼ tsp salt
  • Cracked black pepper, to taste

Topping (Optional)

  • ¼ cup goat cheese, crumbled

Instructions

  1. Preheat the oven: Set your oven to 400°F (200°C) and allow it to fully preheat while you prepare the carrots and the glaze.
  2. Prepare the carrots: Wash and peel the carrots if desired. Cut them into uniform sticks or keep them whole if they are small, to ensure even roasting.
  3. Mix the glaze: In a small bowl, whisk together the avocado oil, balsamic vinegar, honey, minced garlic, dried thyme, salt, and cracked black pepper until fully combined.
  4. Toss carrots with glaze: Place the carrots in a large mixing bowl and pour the glaze over them. Toss thoroughly so all carrots are evenly coated.
  5. Roast the carrots: Spread the glazed carrots in a single layer on a baking sheet lined with parchment paper or a silicone baking mat. Roast in the preheated oven for 25-30 minutes, turning once halfway through, until carrots are tender and caramelized.
