Caramel

  • 2 cups Sugar
  • 1 cup Heavy Cream
  • ½ cup Milk
  • ¼ tsp Salt
  • 240 g Salted Roasted Peanuts

Peanut Nougat

  • 1 Egg White, room temperature
  • 1½ cups Sugar
  • 1 cup Corn Syrup
  • ½ cup Water
  • ½ cup Peanut Butter
  • ½ tsp Vanilla Extract

Chocolate Coating

  • 500 g Semi Sweet Chocolate

Instructions

  1. Prepare the Peanut Nougat: In a saucepan, combine sugar, corn syrup, and water. Heat to 240°F (soft-ball stage) while whipping the egg white to stiff peaks in a separate bowl. Slowly pour the hot syrup into the egg white while continuously beating until thick and cooled slightly. Mix in peanut butter and vanilla extract until smooth.
  2. Make the Caramel: In another heavy-bottomed saucepan, heat sugar over medium heat until it melts and turns golden brown. Carefully add heavy cream, milk, and salt, stirring constantly until smooth. Remove from heat and stir in salted roasted peanuts.
  3. Assemble the Bars: Line a baking pan with parchment paper. Spread the peanut nougat mixture evenly and allow it to set slightly in the fridge for about 20 minutes. Next, pour the warm caramel with peanuts over the nougat layer and spread evenly. Chill again until firm.
  4. Coat with Chocolate: Melt the semi-sweet chocolate using a double boiler or microwave in short bursts, stirring until smooth. Once the caramel and nougat layers are firm, cut into bars and dip each bar completely into the melted chocolate to coat. Place on parchment paper to set.
  5. Set and Serve: Allow the chocolate coating to harden completely at room temperature or in the fridge before serving. Store bars in an airtight container.
