This hearty chicken and vegetable stew is a comforting one-pot meal loaded with tender chicken, wholesome vegetables, and flavorful broth. Perfect for a cozy family dinner on a chilly day.

  • 1 1/2 lbs boneless, skinless chicken thighs, cut into chunks
  • 2 tbsp olive oil
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 3 carrots, sliced
  • 3 celery stalks, chopped
  • 3 medium potatoes, peeled and cubed
  • 1 cup green beans, trimmed
  • 1 cup corn kernels
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups chicken broth
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 bay leaf
  • Salt and black pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add chicken and cook until browned on all sides. Remove and set aside.
  2. In the same pot, sauté onion and garlic until fragrant and translucent.
  3. Add carrots, celery, and potatoes. Cook for 5 minutes, stirring occasionally.
  4. Return chicken to the pot. Add green beans, corn, diced tomatoes, and chicken broth.
  5. Season with thyme, rosemary, bay leaf, salt, and pepper. Bring to a boil.
  6. Reduce heat, cover, and simmer for 30-40 minutes, or until vegetables are tender and chicken is cooked through.
  7. Remove bay leaf, adjust seasoning if needed, and garnish with fresh parsley before serving.

Notes

  • For extra flavor, add a splash of white wine when sautéing the onions.
  • This stew can be made ahead of time and tastes even better the next day.
  • Serve with crusty bread for a complete meal.
  • You can substitute chicken thighs with chicken breast if preferred.
