Ingredients

Scale

Sliders

  • 2 lbs 80/20 ground beef
  • 12 pack Hawaiian rolls
  • 11 slices Colby Jack cheese or American cheese
  • 1 large sweet onion, diced
  • 24 dill pickles
  • 6 tablespoons butter
  • 1 teaspoon salt
  • 1 teaspoon cracked pepper

Easy Burger Sauce

  • 1/2 cup mayonnaise
  • 1.5 tablespoons ketchup
  • 1 tablespoon yellow mustard
  • 2 teaspoons pickled juice (from dill pickles)
  • 1/4 teaspoon cayenne pepper

Instructions

  1. Preheat and Prepare Rolls: Preheat your oven to 350°F (175°C). Slice the Hawaiian rolls horizontally in half but keep them intact as a whole block for easy assembly.
  2. Make Burger Sauce: In a small bowl, mix together the mayonnaise, ketchup, yellow mustard, pickled juice, and cayenne pepper until smooth. Set aside to let the flavors meld.
  3. Season and Form Patties: Place the ground beef in a large bowl and season with salt and cracked pepper. Gently mix to combine without overworking the meat. Form the beef into 12 thin, round patties that will fit the size of the Hawaiian rolls.
  4. Cook the Patties: Heat a large skillet or griddle over medium-high heat. Cook the patties for about 3-4 minutes per side or until they reach desired doneness and are nicely browned.
  5. Melt Cheese: During the last minute of cooking the patties, top each one with a slice of Colby Jack or American cheese, cover the skillet briefly to melt the cheese.
  6. Toast Rolls with Butter: Meanwhile, melt the butter and brush it onto the top halves of the Hawaiian rolls. Place the bottom and top halves on a baking sheet and toast in the preheated oven for 5-7 minutes or until slightly golden and warm.
  7. Assemble Sliders: Spread the burger sauce evenly on both the top and bottom rolls. Place the cooked cheeseburger patties on the bottom roll. Add diced sweet onion and dill pickles over the patties.
  8. Serve: Carefully place the top half of the Hawaiian rolls over the assembled sliders and press gently to secure. Cut into individual sliders along the natural separations in the rolls. Serve warm and enjoy!

Notes

  • Use 80/20 ground beef for juicy, flavorful patties with the right fat content.
  • Hawaiian rolls add a sweet contrast that pairs beautifully with savory beef and tangy pickles.
  • You can substitute Colby Jack cheese with American cheese for classic cheeseburger flavor and meltability.
  • Adjust cayenne pepper in the burger sauce for more or less heat according to preference.
  • For a crispier onion flavor, consider caramelizing the onion instead of dicing raw.
  • These sliders are great for make-ahead meals – assemble and refrigerate before toasting and serving.
