Ingredients

Scale

Proteins

  • 4 chicken apple sausages

Vegetables

  • 1 pound sweet potatoes, peeled and cubed
  • 1 pound Brussels sprouts, trimmed and halved
  • 1 to 2 shallots, thinly sliced

Seasonings and Oils

  • 3 tablespoons olive oil (or more as needed)
  • 1 teaspoon fresh rosemary (or 3/4 teaspoon dried rosemary)
  • 1 teaspoon garlic powder (optional)
  • Kosher salt to taste
  • Black pepper to taste

Instructions

  1. Preheat the oven: Preheat your oven to 400°F (200°C) to ensure it reaches the perfect temperature for roasting your ingredients evenly.
  2. Prepare the vegetables and sausage: Peel and cube the sweet potatoes, trim and halve the Brussels sprouts, and thinly slice the shallots. Slice the chicken apple sausages into rounds about 1/2 inch thick.
  3. Toss with seasoning: In a large mixing bowl, combine the sweet potatoes, Brussels sprouts, and shallots. Drizzle with olive oil and sprinkle with fresh rosemary, garlic powder (if using), kosher salt, and black pepper. Toss everything until evenly coated.
  4. Arrange on a sheet pan: Spread the vegetables evenly on a large rimmed baking sheet. Nestle the sliced chicken apple sausages amongst the vegetables to allow flavors to meld during roasting.
  5. Roast the dinner: Place the sheet pan in the preheated oven and roast for 25 to 30 minutes, stirring the vegetables halfway through cooking to promote even roasting. The sausage should be golden and cooked through, and the vegetables tender and caramelized on the edges.
  6. Check for doneness and serve: Confirm the sweet potatoes are fork-tender and the Brussels sprouts are crisp-tender. Remove the sheet pan from the oven, let cool for a few minutes, then serve immediately for a warm and comforting harvest meal.

Notes

  • Feel free to substitute the chicken apple sausage with your favorite sausage variety or a plant-based alternative.
  • Adjust rosemary amount according to your taste preference.
  • For extra crispiness, broil the sheet pan for 2-3 minutes at the end of roasting, watching carefully to prevent burning.
  • This meal can be stored in an airtight container in the refrigerator for up to 3 days and reheated in the oven or microwave.
  • Add a drizzle of balsamic glaze or a sprinkle of toasted nuts for extra flavor and texture.
