Potatoes

  • 1 lb baby potatoes, halved or quartered
  • 2 tbsp butter (from the total 3 tbsp)
  • 1 clove garlic, minced (from the total 4 cloves)
  • Salt and pepper, to taste

Garnish

  • Fresh parsley, chopped

Instructions

  1. Prepare the potatoes: Heat 2 tablespoons of butter in a large skillet over medium heat. Add the halved or quartered baby potatoes, season with salt and pepper, and cook, turning occasionally, until they are golden and crispy on the outside and tender inside, about 15-20 minutes.
  2. Cook the steak bites: While the potatoes are cooking, pat the sirloin steak pieces dry with paper towels. In a separate skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the steak bites in a single layer and sear until browned on all sides, about 2-3 minutes per side depending on size and preferred doneness.
  3. Add seasoning and garlic: To the steak bites, add the minced garlic, dried thyme, dried rosemary, salt, and pepper. Stir and cook for an additional 1-2 minutes until fragrant.
  4. Combine with butter: Add 1 tablespoon of butter to the steak skillet and stir to coat the meat in the garlic butter sauce. Let the butter melt and infuse the steak bites with rich flavor.
