Instructions

  1. Preheat the oven: Set your oven to 375°F (190°C) to prepare for baking the casserole.
  2. Sauté the vegetables: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the finely diced onion and red bell pepper and sauté for about 4-5 minutes until softened and fragrant.
  3. Combine ingredients: In a large mixing bowl, combine the uncooked brown rice, sautéed vegetables, frozen corn, rinsed black beans, shredded chicken, chicken broth, taco seasoning, mild green chilies, cayenne pepper (if using), and chopped cilantro. Mix well to distribute all ingredients evenly.
  4. Transfer to casserole dish: Pour the mixture into a greased 9×13 inch baking dish and spread it out evenly.
  5. Add cheese topping: Sprinkle the shredded Monterey Jack cheese evenly over the top of the casserole mixture.
