Ingredients

Scale

Broth and Seasonings

  • 3 cups beef broth
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon soy sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Sandwich Ingredients

  • 46 hoagie rolls
  • 6 slices provolone cheese
  • 2 pounds beef (typically chuck roast or similar cut)

Instructions

  1. Prepare the Beef: Place the beef roast into the crock pot and pour the beef broth, Worcestershire sauce, soy sauce, garlic powder, onion powder, dried thyme, salt, and black pepper over it, ensuring the beef is mostly submerged.
  2. Slow Cook the Beef: Cover the crock pot and cook on low for 8 hours or on high for 4-5 hours, until the beef is fork-tender and can be shredded easily.
  3. Shred the Meat: Remove the beef from the crock pot and shred it using two forks. Return the shredded beef to the crock pot to soak up the juices.
  4. Prepare Rolls and Cheese: Slice hoagie rolls lengthwise and toast them lightly in the oven or on a skillet. Place provolone cheese slices on the rolls and briefly melt the cheese under the broiler or in the oven.
  5. Assemble Sandwiches: Pile the shredded beef generously onto the cheesy rolls. Serve immediately with a side of the hot beef broth (au jus) from the crock pot for dipping.

Notes

  • For extra flavor, add sliced onions or mushrooms to the crock pot along with the beef.
  • If you want a more concentrated au jus, skim some fat off the top and simmer it down on the stove.
  • Use hoagie rolls or French rolls for the best texture and flavor.
  • Leftover shredded beef works great for other sandwiches or tacos.
  • Provolone can be substituted with mozzarella or Swiss cheese if preferred.
