Ingredients

Scale

Wrap Fillings

  • 2 whole wheat tortillas
  • 200 g cooked chicken breast, shredded
  • 60 g grated carrots
  • ½ small red onion, finely sliced
  • 50 g romaine or mixed greens
  • 40 g reduced-fat cheddar cheese, grated

Creamy Honey Mustard Dressing

  • 2 tbsp low-fat Greek yoghurt
  • 1.5 tbsp Dijon mustard
  • 1.5 tsp honey
  • 1 tsp olive oil (optional)
  • 1 tsp lemon juice or apple cider vinegar
  • Dash garlic powder
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Prepare the Dressing: In a small bowl, whisk together the low-fat Greek yoghurt, Dijon mustard, honey, olive oil (if using), lemon juice or apple cider vinegar, garlic powder, salt, and black pepper until smooth and creamy. Adjust seasoning to taste.
  2. Assemble the Fillings: Lay out the whole wheat tortillas flat. Evenly distribute the shredded cooked chicken breast along the center of each tortilla. Add the grated carrots, finely sliced red onion, mixed greens, and grated reduced-fat cheddar cheese over the chicken.
  3. Add the Dressing: Drizzle the prepared creamy honey mustard dressing over the layered fillings on each tortilla, ensuring an even spread for balanced flavor.
  4. Wrap the Tortillas: Fold one side of the tortilla over the fillings, then fold in the sides and continue rolling tightly to form a compact wrap. Secure with a toothpick if needed to hold the wrap together.
  5. Serve: Slice the wraps in half diagonally if desired and serve immediately. These wraps can be enjoyed cold or warmed briefly in a pan or microwave for a few seconds if preferred.

Notes

  • You can substitute the chicken breast with turkey or tofu for a different protein option.
  • For extra crunch, add sliced cucumbers or bell peppers to the filling.
  • If you prefer a spicier kick, add a dash of cayenne pepper or hot sauce to the dressing.
  • Wraps can be prepared in advance and kept refrigerated for up to 24 hours for meal prep convenience.
  • Whole wheat tortillas add fiber and nutrients compared to white flour tortillas.
