Beef Filling

  • 1 tbsp olive oil
  • 500g/1lb 2oz lean beef mince (5% fat)
  • 2 tbsp fajita seasoning
  • 1 red pepper, seeds removed and thinly sliced
  • ½ red onion, finely chopped

Fresh Toppings

  • 1 tomato, finely chopped
  • 1 avocado, peeled, stone removed and finely chopped
  • small handful fresh coriander, finely chopped
  • ½ Little Gem lettuce, shredded
  • 12 limes, juice only

Assembly

  • 2 tbsp soured cream
  • 4 large flour tortilla wraps
  • 35g/1¼oz cheddar, grated
  • 2 handfuls tortilla chips
  • pinch salt
  • hot sauce, to serve

Instructions

  1. Prepare the Beef: Heat the olive oil in a large skillet over medium-high heat. Add the lean beef mince and cook until browned, breaking it up with a wooden spoon as it cooks. Stir in the fajita seasoning and continue cooking for another 2 minutes until well combined and fragrant.
  2. Add Vegetables: Add the sliced red pepper and finely chopped red onion to the beef mixture. Cook for 3-5 minutes until the vegetables are tender but still retain some crunch, stirring occasionally.
  3. Prepare Fresh Toppings: While the beef is cooking, finely chop the tomato and avocado. Shred the Little Gem lettuce and chop the fresh coriander. Squeeze the juice from 1–2 limes into a bowl and season with a pinch of salt to make a simple lime dressing.
  4. Assemble Burritos: Warm the flour tortillas slightly to make them pliable. Spread a spoonful of soured cream on each tortilla, then add a generous portion of the beef and vegetable mixture. Top with tomato, avocado, coriander, and shredded lettuce. Sprinkle grated cheddar and a handful of crunchy tortilla chips on top.
  5. Finish and Serve: Drizzle some lime juice over the filling for a fresh citrus zing and add hot sauce to taste. Roll up the tortillas tightly to enclose the filling. Serve immediately while warm and enjoy the delightful mix of textures and flavors.
