Instructions

  2. Prepare the Chicken: Using a sharp knife, carefully slice a pocket into the side of each chicken breast, being careful not to cut all the way through.
  3. Stuff the Chicken: Spoon the cream cheese and bacon mixture into each chicken breast pocket, filling them generously. Use toothpicks to close the openings and secure the filling inside.
  4. Coat the Chicken: Crush the Doritos into fine crumbs in a plastic bag or food processor. Roll each stuffed chicken breast in the crushed Doritos, pressing gently so that the crumbs adhere evenly to the surface.
  5. Cook the Chicken: Heat olive oil in a large skillet over medium heat. Add the coated chicken breasts and cook for about 6-8 minutes on each side, or until the coating is golden brown and the chicken is cooked through with an internal temperature of 165°F (75°C).
  6. Rest and Serve: Remove the chicken from the skillet and let it rest for 5 minutes before serving to allow the juices to redistribute and the filling to set.
