A soothing and flavorful garlic soup enhanced with fresh sage and rich chicken stock, served with a creamy homemade mayonnaise. This comforting dish balances the robust aroma of roasted garlic with a velvety texture, making it perfect for chilly days or when you need a warm, healing meal.

Ingredients

Scale

For the soup:

  • 64 oz chicken stock
  • 1 small bunch fresh sage
  • 1 large bulb garlic

For the mayonnaise:

  • 1 large egg, yolk and white separated
  • 1 tsp Dijon mustard
  • Pinch salt
  • 2/3 cup olive oil or preferred vegetable oil

Instructions

  1. Roast the garlic: Preheat your oven to 400°F (200°C). Cut the top off the garlic bulb to expose the cloves, drizzle with a little olive oil, wrap in foil and roast for about 30-35 minutes until soft and fragrant.
  2. Prepare the soup base: In a large pot, bring the 64 oz of chicken stock to a simmer over medium heat. Add the fresh sage and let it infuse the stock gently for about 5 minutes.
  3. Add roasted garlic: Once the garlic is cool enough to handle, squeeze the softened cloves out of their skins directly into the simmering stock. Stir well to incorporate the sweet, mellow garlic flavor throughout the soup.
  4. Simmer and season: Let the soup simmer uncovered for 10-15 minutes, allowing the flavors to marry. Remove the sage sprigs, then season tastefully with salt and pepper as needed.
  5. Prepare the mayonnaise: In a clean bowl, whisk the egg yolk with Dijon mustard and a pinch of salt until combined. Slowly drizzle in the olive oil while continuously whisking to emulsify into a smooth, thick mayonnaise.
  6. Whisk egg white: In a separate bowl, whisk the egg white until stiff peaks form to lighten the mayonnaise if desired, and gently fold them into the mayonnaise mixture for a lighter texture.
  7. Serve: Ladle the hot garlic soup into bowls and add a spoonful of the homemade mayonnaise on top or serve it on the side as a creamy contrasting dip.

Notes

  • Roasting the garlic mellows its pungency and enhances sweetness, which is key to this soup’s flavor.
  • Be sure to use fresh sage for an aromatic infusion.
  • If you prefer a vegetarian version, substitute chicken stock with vegetable stock.
  • For food safety, use pasteurized eggs or cook the mayonnaise gently if serving to vulnerable groups.
  • Adjust the amount of mayonnaise served based on personal preference for richness.
