  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1-inch piece ginger, grated
  • 1 can (13.5 oz) coconut milk
  • 2 cups fish or vegetable broth
  • 1 tablespoon fish sauce
  • Juice and zest of 1 lime
  • 1 red chili, sliced (optional)
  • Salt and pepper to taste
  • Fresh cilantro or basil for garnish

Instructions

  1. Heat oil in a pot over medium heat. Sauté onion until translucent, about 3–4 minutes.
  2. Add garlic and ginger, cook for another 1–2 minutes.
  3. Pour in coconut milk and broth. Stir in fish sauce, lime juice, and zest.
  4. Bring to a simmer, then add the fish chunks and red chili.
  5. Simmer gently for 5–7 minutes until fish is cooked through.
  6. Season with salt and pepper. Ladle into bowls and garnish with fresh herbs.
