Ingredients

Scale

Casserole Ingredients

  • 4 cups diced or shredded cooked chicken breast
  • 8 slices cooked and chopped bacon
  • 5 cups broccoli florets OR 1 pound thawed frozen spinach (well-drained)
  • 3 cloves minced garlic
  • 1 cup ranch dressing
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup shredded cheddar cheese

Topping

  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup shredded cheddar cheese

Optional

  • 1-3 teaspoons ranch seasoning mix (for added flavor)

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) to prepare for baking the casserole evenly.
  2. Prepare Vegetables: If using broccoli, wash and cut into florets; if using frozen spinach, make sure it is fully thawed and well-drained to avoid excess moisture in the casserole.
  3. Mix Ingredients: In a large bowl, combine the diced or shredded cooked chicken, cooked chopped bacon, broccoli florets or spinach, minced garlic, ranch dressing, 1/2 cup shredded mozzarella, 1/2 cup shredded cheddar, and optional ranch seasoning mix if using. Stir until everything is evenly coated and mixed.
  4. Transfer to Baking Dish: Spread the mixture evenly into a greased 9×13 inch casserole dish.
  5. Add Topping: Sprinkle the remaining mozzarella and cheddar cheese evenly over the top of the casserole for a cheesy crust.
  6. Bake: Place the casserole in the preheated oven and bake for 25-30 minutes or until the cheese on top is bubbly and golden brown.
  7. Serve: Remove from oven and let the casserole cool for 5 minutes before serving to allow it to set.

Notes

  • You can substitute the ranch dressing with a homemade ranch sauce for a fresher taste.
  • Use fresh chicken breast for best texture, or leftovers work well in this dish.
  • Ensure the spinach is well-drained to prevent a watery casserole.
  • Add more ranch seasoning for a stronger flavor boost if preferred.
  • Can be made ahead and refrigerated before baking, just add a few extra minutes to baking time if cold from refrigerator.
