  2. Activate the Yeast: In a bowl, mix the warm milk with active dry yeast and honey. Let it sit for 5-10 minutes until frothy, indicating the yeast is active.
  3. Make the Dough: In a large mixing bowl, combine all-purpose flour, bread flour, milk powder, salt, and sugar. Add the softened butter, egg yolks, and the activated yeast mixture. Knead the ingredients together until a soft, elastic dough forms, about 10 minutes by hand or 5 minutes with a stand mixer equipped with a dough hook.
  4. First Proof: Cover the dough with a clean cloth or plastic wrap and let it rise in a warm area for about 1 hour or until doubled in size.
