  • 4 large flour tortillas
  • 1 cup shredded cheddar cheese
  • 1 cup cream cheese, softened
  • 2 tablespoons unsalted butter

Instructions

  1. Prepare the Cinnamon Apples: In a medium skillet over medium heat, combine the sliced apples, lemon juice, ground cinnamon, and brown sugar. Cook and stir occasionally until the apples are tender and the sugar has caramelized slightly, about 5-7 minutes. Remove from heat and set aside.
  2. Assemble the Quesadillas: Spread a quarter cup of softened cream cheese evenly over one side of each flour tortilla. Sprinkle a quarter cup of shredded cheddar cheese on top of the cream cheese, then spoon half of the cooked cinnamon apples over the cheese. Top with a second tortilla to close the quesadilla.
  3. Cook the Quesadillas: Heat 1 tablespoon unsalted butter in a large skillet over medium heat. Carefully place two quesadillas in the skillet and cook until the bottom tortilla is golden brown and the cheese begins to melt, about 3-4 minutes. Flip and cook the other side until golden and the cheese is fully melted, another 3-4 minutes. Repeat with the remaining butter and quesadillas.
