Amish Snow Day Soup is a hearty and comforting soup loaded with vegetables, ground beef, and noodles. It’s perfect for cold days and made with pantry staples.

Ingredients

  • 1 lb ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can (15 oz) diced tomatoes
  • 1 can (15 oz) corn, drained
  • 1 can (15 oz) green beans, drained
  • 1 cup elbow macaroni
  • 4 cups beef broth
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 teaspoon Italian seasoning

Instructions

  1. In a large pot, brown ground beef with chopped onion and garlic. Drain excess fat.
  2. Add diced tomatoes, corn, green beans, beef broth, and seasonings. Stir well.
  3. Bring to a boil, then reduce heat to a simmer for 10 minutes.
  4. Add elbow macaroni and cook for another 10–12 minutes until pasta is tender.
  5. Adjust seasoning to taste and serve hot.

Notes

  • Swap macaroni with egg noodles or rice.
