Instructions

  1. Prepare the eggs: In a mixing bowl, beat the 5 large eggs with a pinch of salt and white or black pepper until well combined.
  2. Cook the scrambled eggs: Heat 1 tablespoon of vegetable oil in a skillet or wok over medium-high heat. Pour in the beaten eggs and cook, stirring gently, until soft scrambled but still slightly runny. Remove the eggs from the pan and set aside.
  3. Cook the aromatics and tomatoes: In the same pan, add the remaining 1 tablespoon of vegetable oil. Add the minced garlic and half of the chopped green onion; sauté briefly until fragrant, about 30 seconds. Then add the tomato wedges and stir fry for 2-3 minutes until they begin to soften.
  4. Add the sauce elements: Stir in 2 tablespoons ketchup, 1 tablespoon oyster sauce or soy sauce, 1/2 tablespoon sugar, and 1/3 cup water. Mix well and let the sauce simmer gently for 2-3 minutes until it slightly thickens and the tomatoes are fully cooked.
  5. Combine eggs and sauce: Return the scrambled eggs to the pan and gently fold them into the tomato sauce. Cook for another 1-2 minutes, allowing the flavors to meld together.
  6. Finish and garnish: Drizzle 1 teaspoon sesame oil over the dish and sprinkle with the remaining chopped green onion. Give a final stir and remove from heat.
